Quick & Easy Fajita Bites

When summer hits, the barbecue invitations come in bulk it seems. I love a good get together with friends and I always want to bring a snack along to contribute. The last thing I want to do in the heat is cook so I like to whip something simple up. Triscuit Crackers are a little piece of awesome that allows me to create a simple and delicious snack to get my friends excited for. Triscuit is made for more, so many simple creations you can come up with. I’m going to share my newest favorite recipe with y’all below, quick & easy fajita bites. They are SO good.

When I was deciding on what exactly I would create, I made sure to browse the Triscuit Pinterest page for some inspiration. Through their “Makers of More” program, Triscuit partnered with a few different “makers” to bring super fun creations that everyone can enjoy. My absolute favorite is McClure’s + Triscuit, their creations really inspired me to come up with something so delicious that was incredibly easy to make and share for our next get together. McClures is a family business from Detroit and they rock out everything from pickles to tapenade. I was inspired to reach for simple ingredients and turn my creation into so much more. Just like the did with their McClure’s Olive Tapenade!

I went with a recipe that was five ingredients. A fajita veggie mix (onions, green & red peppers), sour cream, fajita seasoning, grilled chicken and of course, Triscuit crackers. It took me under 20 minutes to make the entire try and prepare it for our friends get together.

The base of your fajita bite is going to be one Triscuit cracker, the original variety. The only thing you really need to prep ahead is the chicken and spread. I bought pre-cooked grilled chicken and just went ahead and mixed it with some fajita seasoning. I took one tub of sour cream and mixed it with a package of fajita seasoning to make the spread.

Spread the sour cream mixture onto your Triscuit cracker. Top it with chicken & some of the fajita veggie mix. And you’re done and ready to enjoy your delicious snack.

These were the hit of our barbecue and I kept getting asked for the recipe! Something so simple but packs a punch making it so much more. Like I said, they’re incredibly easy to make.
