Jalapeno Lime Rice

Last week when we got back from our camping trip I had an opportunity to do something fun. I teamed up with Minute® Rice and attended a super fun summer soiree. Myself and a few other bloggers got together  at a fellow bloggers home to chat all things summer and Minute Meals. It was great conversation and awesome food. I learned quite a few easy meals made with Minute® Rice. From Arancini (fried rice balls) to Brown Rice, Kale, Roasted Tomato & Feta Salad, everything was delicious.

Minute® Rice is a brand that I have loved for as long as I can remember, it’s always a staple in my kitchen. But for the majority of that we’ve always just had it plain. So it was really fun to see other ways to use this brand and the multiple recipes that could be created in just minutes. I’m all about the quick and easy meals.

All of the recipes at the party used Minute® Rice and my favorite was definitely the Horchata, I’ve never tried this before and I was super impressed. Minute® Rice has always been a staple in our cabinet like I said earlier but I really had no idea all of the things you could do with it. I mean, a drink? I never would have thought of that. It takes five minutes to cook and can become the base of so many meals for your family. You can totally use it at your next get-together and you will get rave reviews.

One of my favorite parts of our little get together was the Iron Chef competition. We split off into groups and each group made a quick and easy Minute Meal. We went with Aloha Rice and added shrimp, pineapple, red pepper, lime and a few other ingredients and though we didn’t win it was delicious. It really opened me up to what Minute® Rice can do. Learning about all of the different products from Minute® Rice was pretty cool too.

Did you know it’s not just white rice? They’ve also got Minute 100% Whole Grain Brown Rice for an amazing, nutritious option. The best part of the brown rice, for me, is that it’s ready in 10 minutes, which is faster than regular long cooking brown rice. LOVE it. Minute® Multi-Grain Medley, the newest product from Minute® Rice is a blend of four gluten-free, 100% whole grains. It’s got long grain brown rice, Thai red rice, wild rice ad quinoa and is finished in 10 minutes too. Since I saw all of these recipes and different variations of minute meals at the party, I was inspired to create my own minute meal with Minute® Rice.

I wanted to stick with the Minute Meals theme and go with something that could be done in under 10 minutes. I’m a fan Mexican dishes and I love spicy food. I wanted my rice to have a little bit of a kick which is why I decided to create this delicious jalapeno lime easy rice.

I used just a few simple ingredients and what I got was delicious. Fresh limes, jalapenos, crushed red pepper and garlic powder are all you need in addition to your Minute® Rice.

Jalapeno Lime Easy Rice #MinuteMeals

During the five minutes that it takes to whip up your Minute® Rice you can do the other prep and the whole process is done in under 10 minutes.

Jalapeno Lime Rice
A quick, easy and delicious easy rice meal.
Ingredients
  • 2 cups Minute® Rice
  • 2 jalaepenos, sliced
  • juice of two limes
  • 1 tbsp crushed red pepper
  • 1 tbsp garlic powder
Instructions
  1. Cook your Minute® Rice per the instructions on the box.
  2. Once cooked squeeze the lime juice into your rice pot and mix.
  3. Mix garlic powder and crushed red pepper.
  4. Mix jalapenos.
  5. Enjoy.

    On your list of ingredients jalapenos is spelled incorrectly. I don’t want to a spelling Nazi. Recipe looks great.

    I am going to love this recipe. I love jalapeno basil rice so this is it’s sister. I can cook many things but for some reason I can’t make Minute Rice without messing it up. I’ve learned how to make regular rice and now have it down to an art.

We’re about two hit two years since Jim entered rehab and I’m forever proud of the changes he made and the man he has become⁣
⁣
For the person reading this who loves an addict. It’s changed you, I know. It made you a little harder to reach. It made getting out a bed a little rough. It’s isolated you from groups of friends. Your hearts a little more closed off then it once was. Your trust is a little bit broken. You’ve felt more alone then you ever have. You’ve felt judged. You’ve felt betrayed. You’ve felt at fault.⁣
⁣
Whether you’re past it or still in the trenches. I want you to know some things. ⁣
⁣
I need you to know that it’s not your fault. I need you to know that you could not have done anything differently. I need you to know that you can’t cure it. You didn’t cause it. And you can’t control it. ⁣

Most of all I need you to know that it gets better. I need you to know that it’s ok to feel happiness again. It’s ok to put yourself first. It’s ok to take care of your. ⁣

And you’re not alone. ⁣

I promise you that there’s a light on this side of the tunnel just waiting for you to walk through. And that light doesn’t mean it’s over, it’s just there to guide you. Because every day could be a battle. ⁣

I stayed for the battle. But that’s not the only way. If you need to leave that’s okay too. Either way. You have to get to that light. ⁣

Don’t be afraid to reach out for help. Go to a meeting yourself. Grab a book (Co-Dependent No More, was helpful for me) listen to a podcast. Get yourself a village. TAKE CARE OF YOURSELF⁣
