I know that pumpkin everything is taking over but I am not ready to let go of summer just yet. Lucky for me it’s still hitting 90 degrees here so I don’t have to. I wanted to come up with a super end of summer recipe for y’all. What better way to get through those hot summer days we are still having? Ice Pops! I knew I wanted to do a delicious ice pop and make them super fun so these Peach Bellini Ice Pops are #EpicWithAndre.
With a fabulous range of California Champagnes and Sparkling Wines, André has been giving us great champagne and wine since 1966 without breaking the bank. Whether you’re having a chic bridal shower or end of summer bash, It’s about time to make it epic with André – whatever “it” may be.
Champagne is always for celebrating and I for one would like to celebrate the continuation of summer for just a bit longer. Pairing it with fresh, juicy peaches seemed like a perfect match up for these epic ice pops.
Peaches are one of my favorite fruits and I love a good peach bellini, so this recipe was definitely a match made. I even painted half the ice pop stick gold to go with the André. It was so fun.
I have an ice pop mold that holds twelve. So I started with 5 fresh peaches and peeled the skin off. I quartered the peaches while slicing and tossed them into a food processor. You want to process them until liquefied and you get a thin puree, I added a tablespoon of water.
Once I had pureed the peaches, I added the juice of 3 lemons into mixture. This will give the ice pops a bit of a tart flavor so they’re not too sweet.
Once you mix the peach puree and lemon juice, it’s time to add your André. Add 3/4 cup of André Extra Dry and mix.
Once you’ve got your mixture done, pour it into your ice pop mold. For my mold, I put them in the freezer for about 30 minutes, added the ice pop and waited overnight for them to freeze. If you have an actual ice pop maker this process would of course go a bit quicker. And if you don’t have either you can get mini paper cups and do the same, let the mixture freeze for about 30 minutes and then stick in your ice pop sticks so they stand upright.
You’re left with a super delicious epic treat. And they’re super easy to make so that is always a bonus!
- 5 Peaches
- 3 Lemons
- 1tbsp Water
- 3/4 cup André Extra Dry Champagne
- Peel and puree five peaches
- Squeeze the juice of three lemons into the mixture
- Slowly pour in your André Extra Dry
- Freeze overnight and enjoy
You can also grab Andre Brut from the Andre Champagne line and have it on it’s own with you ice pops.
